I love soup but just can't seem to make a good stock to start with Help please !!

I love soup but just can't seem to make a good stock to start with Help please !! Brooks, I make chicken stock by first roasting the chicken and eating every last scrap off the carcass ;D Then, I put the carcass in a large soup pot (3 gal) with an onion, celery, celery seed and a couple of carrots. I cook this for an entire day on a temp so it just barely simmers, but steams nicely. Refrigerate overnight, heat slightly the next day, so it's liquid again, and strain it through a dish towel into two regular soup pots. I make soup with one pot and can the rest or I just can the whole batch in my pressure canner. If you are making one batch of soup, just do the same thing with less water and cook the stock one day, refrigerate and make the soup the next. Oh, and you'll have to add lots of salt:) This year I made the best turkey stock I've ever made and I believe it's because I used all of the skin and appendages to make the stock, so it was nice and dark and tasty. My chicken stock is usually much more mild and light colored.

Good recipe, Alison! You can freeze stock, too. For a cheat, try some of the really good premade stocks you can find in groceries now. Look for those that have no MSG and are low sodium. You can add your own salt to taste. www.kmart.com/shc/s/p_10151_10104_033V002112987000P

Brooks, I just throw a whole cut up chicken (with bones and skin) , a couple of chicken bullion cubes and some ground black pepper in a pot. Cover well with water (I put in extra to ensure I get a goodly amount of stock) and let it cook for a few hours. I then take out the chicken pieces and pull the meat off of the bones and remove all of the skin. I then cut up the chicken and throw it back in the pot. At that point I add whatever veggies I'm going to - usually onions or leeks, carrots - sometimes a potatoe or two - really whatever I have handy and sounds good at the moment. I always add a small amount of barley also. If I want to add noodles, I either buy a really nice dried pasta and cook it before I add it to the pot OR I make a quick batch of homemade noodles and throw those in the stock to cook. Either way, I add the noodles just before I'm ready to serve. It's always lovely and smells so good! Add some good crusty rolls or bread and you've got a meal.

Oh dear. We spent the weekend in Kentucky, and I had meat at every meal. They seem to put bacon on absolutely everything. I don't exactly regret it! But I need to get back on the fresh and simple menu.

Gaaah I am at my folks'...lots of food...and Dad's 80th birthday coming up this Saturday with a meal at one of the nicest restaurants in town...yikes!

Been a while but actually due to stress related not eating I am at 145. Just losing a little feels better-but need to add exercise. Need to commit to getting back in shape-I think you need to be in good shape to ride really well and to chase after your 3 1/2 year old grandson. ;D
Have you guys tried Quinoa. Really good grain that is high in protein. Fills you up-I add it to salad with meat (chicken or fish) and it is excellent. I make mine with organic chicken broth (instead of water) And also add sauteed in olive oil red peppers, onions and garlic. Tasty.
