Confession, I am eating a Reece's candy bar as I type this.
However! I am also making this (adapted to be easier) Mollie Katzen recipe today. Very flavorful, the only fat is olive oil, and comforting on a chilly night.
Influenced Vegetable Stew
1 can dark red kidney beans, rinsed and drained 3 Tbsp olive oil 4 cloves garlic, crushed 1 large onion, chopped 1 tsp salt 1 cup thinly sliced potatoes 1 tsp. cinnamon 1 tsp. ground cumin lots of fresh black pepper a dash or 2 of crushed red hot pepper juice one large lemon 2 large carrots sliced 1 small cauliflower, broken into small flowerettes 4 fresh tomatoes, cubed OR 1 can diced tomatoes with juice 2 tsp. honey
Saute onion and garlic in oil with salt for 5 minutes.
Add potato, spices, and lemon juice. Cook, gently, covered for 10 minutes. Stir a few times, and add water if mix sticks to the pan.
Add everything else but the beans. Cover, cook gently for about 30 minutes. Stir now and then.
Add beans, cover and cook gently another 10 minutes or so.
Great with corn bread or crusty French or Italian bread and a big green salad.
