I spoke with a chiropractor in the summer regarding Brig. We discussed ulcers and turn-out and decided to chat once those two things had been addressed. And they have. However, I'm still having some issues with Brig and I think it may be his back.
The chiropractor I spoke with is recommended, but he is super expensive ($200 -- a lot in these parts) and has a line of products to sell people. His website doesn't even mention the work he does on horses, just the stuff he has to sell.
What kinds of questions do I ask when looking for an equine chiropractor?

I think the word-of-mouth method is the best way to get any service person. Whether it be doctors, farriers or chiropractors.
Ask your friends who they use. What do they like about that person? Have they tried several in the area?
I found my equine chiropractor on UDBB from someone who lives in my area. Going to a larger BB like UDBB or COTH (although COTH can be catty and I never did get a response to my request for drs) might be a good way to find someone in your area.
I have reservations about people who sell products along with their service. You may find out your horse 'needs' a bunch of that expense stuff if you use that particular dr. On the other hand, that dr. may not push his stuff at all, just has it for folks who feel like they need to give their horse something.
