Does anyone here do a gluten free diet? If so can you share any easy recipes?

Hi Lisa - I try to.... not always successful. What kind of recipes do you want? I keep it simple, replace flour with a rice flour mix and altho things do change a bit different there isn't too much difference.
Let me know what you are after - sweet/savory etc.

I also do mainly wheat-free but that often is gluten free as well. Bob's Red Mill has wonderful gluten-free flours and you can also purchase his big cookbook of wonderful baked goodies/pancakes etc. The company also makes a pancake mix and some bread mixes that can be baked in the bread machine (but either decrease the liquid ingredients or add some gluten-free all purpose flour). Yes, I have slowly discovered that I definitely have an intolerance to wheat. After severely cutting back on wheat this spring, my asthma symptoms went away; no more daily inhaled steroids! Amazing!!. And unless the pollen count is very high (or I decide to clean out the filthy tackroom in the barn) my head is much less stuffy. Also gone is bloating. I have 2 sisters who also cannot tolerate gluten/wheat and at least 1 cousin. So in our family, it appears to be familial. And now, I'm finding that I just cannot eat wheat anymore, so my diet has slowly become GF. There are wonderful gluten-free cookbooks out there. Look for ones that have been published recently; they have the better recipes. GF baking has really come along way in terms of quality. Carol Fenster has at least 2 nice books out. My local Giant carries GF muffins, cookie mixes, the Bob's Red Mill products, Gluteno cookies which are fabulous and even GF frozen pizza crusts! I'm also addicted to rice crackers and potato chips are usually GF (NOT that I need potato chips LOL!) Most of the GF pastas are also wonderful. I also do alot of stir fry as there is nothing better than fresh veggies/rice and some kind of meat or seafood. And i always keep a mix of ground turkey or beef/some kind of beans and salsa cooked together in my freezer. With a handful of tortilla chips(make sure they are only corn and do not have wheat in them), the meat mix and shredded cheese, you always have a quick dinner. I think Im addicted to wheat! I have tried several times to cut it out, and each time I fail. I know I have to, because every time I eat wheatmy body attacks itself, and I feel like I have been poisoned. I do ok when I just eat friuts and veggies, but im a sucker for fresh bread and pasta.

Try the GF pastas! They really are delicious! My HH can not tell the difference!
GF breads are not quite as good as a wonderful loaf of fresh Italian bread-but since I pay a price if I eat that, I just don't go there anymore!

then today checking email I got mail from thedailygreen.com and in it were 17 gluten free receipes.. maybe you can check there for some new ones..
