I need some really good recipes that include chicken BUT- they cannot have any mushrooms or greenpeppers in them, nor lima beans, broccoli or any "healthy" veggie. Ok well they can have the above as long as they are easy to pick out as my bf doesn't eat anything except peas, carrots, corn or green beans or potatoes... I'm sick of the same old recipes and need something different that is healthy. Heck, I don't care if it even takes awhile to make at this point! Help!

How about a chicken pot pie, you can add any veggie you want? Use low-fat or non-fat milk in the sauce. MMMMMMMMMM on a cold and windy day

What about chicken and rice casserole?A can of cream of celery soup, a can of cream of chicken soup, some chicken, some peas and rice. Bake it until the chicken is done and the rice is tender.

Throw a roaster in the oven. Then get some of those Russian fingerling potatoes. Toss those in with the bird when it's about 45 minutes from being done. Onions, too. No mushrooms? Really?? DO you love this guy, seriously? Because that's a huge flaw. Okay.... you've got the chicken, and the leftovers will be great cold, too. A cucumber salad. French bread.

I have made the following quite a bit recently, you can swap the tofu for chicken, and swap veggies too if you want. The idea is that you get a lot of stuff with a little bit of noodles, rather than a lot of noodles with a little bit of stuff.
1 yellow bell pepper 1 zucchini 1 yellow squash 1-2 tomatoes 2 cloves garlic 1 cup plain tomato sauce olive oil 1 package tofu (or chicken) basil and rosemary to taste whole wheat pasta
Add olive oil, 2 cloves garlic, basil/rosemary, pepper and tofu (chicken) to frying pan for 3-4 minutes or so then add tomato paste and other veggies
I feel awesome after eating this. It's like the only thing I know how to cook well at the moment, lol
