I thought I would share my method for making delicious banana bread that is healthier than the standard version (also works for other cake-type breads and muffins). This is what I do to modify the recipes for my vegan husband, which in the process cuts out a lot of calories too. While I would not call this a low-cal food, it does let you reduce some of the fat and calories and still make something really yummy. You can't tell.
Start with a standard recipe like Betty Crocker 1) Use 1/2 the sugar called for in the recipe - very ripe bananas are already very sweet! 2) In place of eggs use an egg replacer powder (you can find it in the health food aisle - VERY handy to have around, I use it for all my baking!) 3) Substitute applesauce for half of the butter/oil 4) Since we love chocolate I toss in a handful of chocolate chips in place of the walnuts.
